The will to test ourselves on the production of artisanal wines from native and historical varieties is one of the reasons that has pushed us to produce this Trebbiano. The grapes from the first and most ancient vineyard present in the estate are hand-harvested in September to be then crushed, pressed in the way to obtain the must with which start the vinification. The fermentation takes place spontaneously with the aid of indigenous yeast through the preparation of a “pied de cuve” created by choosing the most ripened grapes before harvest. From 2018 Trebbiano Fosso Cancelli undergoes elevation and aging partly in terracotta amphorae and partly in Slavonian oak barrels.
